This is a fun appetizer or lunch or maybe even a little after school snack. Savannah and Kylie love making it with me. It's super easy and yummy!
Ingredients:
1 tube (13.8 oz.) refrigerated pizza dough
1/2 cup pizza sauce
1/2 cup shredded cheese, divided
1 cup fresh baby spinach leaves
any other additional pizza toppings of your choice
Heat oven to 400.
Unroll dough from tube and pat down.
Spread pizza sauce on top.
Sprinkle with half of cheese and top with spinach leaves.
Roll the dough up, starting with the short end.
Cut into 8 pieces (the same way you would cut if making cinnamon rolls).
Lay pieces flat in a greased pie pan.
Sprinkle with remaining cheese. (Greg likes more cheese, so add ad much as you would like) :)
Bake 22-25 minutes or until golden brown.

Sausage & Veggie Pizza
Pizza Dough:
1 cup of warm water
1 t. yeast (or one packet)
1 tsp. sugar
3 cups flour
1 tsp. salt
1/4 c. parmesan cheese
1 tsp. olive oil
Combine water, yeast and sugar and let foam for 5 minutes. Add 1/2 cups of flour and salt and mix well. Then add the parmesan cheese. Continue to add flour 1/4 cup at a time (you may not need all three cups). Knead for 3-5 minutes until no longer sticky. (I don't add the parmesan cheese until I have added all the flour and then I mix it in. I don't know if it makes a difference. I just like it better.) Place dough in an oiled bowl for 1 1/2 hours.
Spread lightly with cornmeal. Put down flour before rolling out your dough. I put the dough in a jelly roll-style cookie sheet and spread it to take up the entire pan.
Add sauce, 1 lb mozzarella cheese, ½ sliced zucchini, 1 sliced tomato, ¼ bell pepper, ½ lb cooked reduced fat sausage.
Cook for 10-12 minutes at 475.

Turkey Stromboli (Parents Magazine)
Serves 6,
1 pkg (10 oz.) frozen, chopped spinach, thawed and well drained
1 pkg (11 oz.) refrigerated thin crust pizza crust
1 cup pasta sauce, divided
2 tsp low fat milk
1/2 cup shredded Colby & Monterey Jack cheese blend
2 tsp grated Parmesan
1 lb. turkey-breast tenderloins, cut into
Heat oven to 400 degrees. Boil a cup of water on medium in a large skillet; add turkey and return to boiling. Cover; simmer 8 to 10 minutes. Allow to cool slightly, then chop.
Unroll crust into a 14"x12" rectangle on a parchment-lined baking sheet (I just greased my pan). Spoon half the sauce down the center, lengthwise, leaving 3" on either side. Layer spinach, turkey, and cheese over sauce. Cut 12 strips on both sides of crust. Fold strips over filling, so they overlap. Brush with milk and sprinkle with Parmesan cheese.
Bake for 12 minutes. Serve with remaining sauce.
