Sausage & Veggie Pizza

Pizza Dough:

1 cup of warm water

1 t. yeast (or one packet)

1 tsp. sugar

3 cups flour

1 tsp. salt

1/4 c. parmesan cheese

1 tsp. olive oil

Combine water, yeast and sugar and let foam for 5 minutes. Add 1/2 cups of flour and salt and mix well. Then add the parmesan cheese. Continue to add flour 1/4 cup at a time (you may not need all three cups). Knead for 3-5 minutes until no longer sticky. (I don't add the parmesan cheese until I have added all the flour and then I mix it in. I don't know if it makes a difference. I just like it better.) Place dough in an oiled bowl for 1 1/2 hours.

Spread lightly with cornmeal. Put down flour before rolling out your dough. I put the dough in a jelly roll-style cookie sheet and spread it to take up the entire pan.

Add sauce, 1 lb mozzarella cheese, ½ sliced zucchini, 1 sliced tomato, ¼ bell pepper, ½ lb cooked reduced fat sausage.

Cook for 10-12 minutes at 475.

Combine pumpkin, apple, apple juice, sugar and pumpkin pie spice in medium saucepan. Bring to a boil; reduce heat to low. Cook, stirring occasionally, for 1 1/2 hours. Homemade Air Freshener

Yes, I know, this is a different kind of recipe because it's not edible but it will make your home smell fantastic! Like something is (or was) cooking in the oven, or a super yummy candle is burning. :) I found these on one of my favorite blogs & was so excited to try them! The best part is, I already had all the ingredients. It is super easy & smells so yummy!

"Citrus" Air Freshener:
Peels of lemon, orange, lime, tangerine or grapefruit
1 pot of water

Put slices of citrus fruit peel into the pot of water. Let simmer gently for an hour or so for a citrus scent.

"Baked Goodness" Air Freshener:
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon nutmeg or a few cloves
1 pot of water

Let simmer gently for an hour or so for a fresh baking scent.

Macaroni Grill Bread

(This one's for you mom) :)

As you know, Macaroni Grill is one of my favorite restaurants! I saw this recipe and had to try it. Of course, it doesn't taste exactly like the real deal (they never do) :), but it is pretty darn close & is easy to make.

1 Tbsp yeast
1 Tbsp sugar
1 cup warm water
2 1/2 cups flour
1 tsp salt
1 Tbsp olive oil
1 1/2 tsp dried rosemary

Topping:
2 Tbsp butter, melted
1 1/2 tsp dried rosemary
1 Tbsp fresh course salt

Mix yeast, sugar, and water till frothy. Add 2 cups of the flour, salt, oil, and rosemary; mix until smooth. Add enough flour to make a soft dough, form into a round loaf and place on a lightly greased pan. Cover and let rise until doubled in size - about 45 minutes.

Preheat oven to 450. Brush melted butter over the entire loaf, sprinkle with rosemary and course salt. Bake for about 20-25 minutes. Serve with oil and balsamic vinegar.

Pumpkin Oatmeal Chocolate-Chip Cookies

1 pouch Pumpkin Spice Quick Bread Mix (I use Krusteaz. You can find it at Sams this time of year)
1/2 cup (1 stick) butter, softened
1 egg
1 cup quick-cooking oats
1/2 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
3 tablespoons water
1/2 cup chocolate chips (optional, but I prefer it) :)
sugar (too roll cookies in at the end)

Preheat oven to 375 degrees. Place quick bread mix and butter in medium bowl. Using an electric mixer, mix on medium speed for 1 minute. Add egg, oats, sugar, cinnamon, nutmeg and water. Continue to mix on medium speed until dough forms. Stir in chocolate chips, if desired. Using rounded tablespoon dough for each cookie, form balls and roll in sugar, if desired. Place 2 inches apart onto an ungreased baking sheet. Bake 11-13 minutes. Makes 2 dozen cookies.

Oatmeal Wheat Rolls

3 cups warm water
2 packages yeast
1/3 cup melted butter or margarine
½ cup sugar white or brown (I use either)
1 tbsp salt
1 cup dry milk
1 cup potato flakes
2 eggs
1 ½ cup oatmeal (minute or old fashioned)
3 cups whole wheat flour
3 cups white

Mix in that order, using the white flour to thicken as needed- you may need a little more or a little less. Knead for 8-10 minutes, it will be a little lumpy from the oatmeal and if you use old fashioned it will be lumpier. Set in a warm place to rise for an hour, make into rolls and let rise again for another 30 minutes. Heat oven to 350 degrees and bake for 20-25 minutes- depending on the size of your roll.

April's Salad

This is one of my most favorite salads ever! My sister-in-law makes it for all of our family dinners and for holidays. I don't know the real name of it, so I will call it April's salad, since she is the one who introduced it to me. :) It is soooooo yummy!!

3/4 c sugar
1/2 c salad oil
3 1/2 Tbsp poppy seeds

Fruit & Spice Oatmeal

Perk up ordinary oatmeal with the tastes of fall—apple, honey, and a touch of spice. Yummy! :)

2 1/4 cups water
3/4 cup steel-cut oats
1/8 teaspoon salt
1 large tart cooking apple, unpeeled, cored and chopped
1/4 cup chopped dates or dried figs (optional- I love figs, but I know some people don't)
3 tablespoons honey
1 teaspoon pumpkin pie spice
1/2 teaspoon ground ginger

1. In medium saucepan, bring water to a boil. Stir in oats and salt. Reduce heat; simmer gently 15 minutes, stirring occasionally.
2. Stir in apple, dates, honey, pie spice and ginger. Cover and simmer over low heat 15 minutes longer or until oats are tender but still have a slight bite to them. Spoon into bowl.

Jamie's Protein Fruit Smoothie

6 oz. light vanilla yogurt
1 scoop vanilla protein powder
fruit of your choice (fresh or frozen)

Blend in the blender until everything is mixed well. Super easy and super yummy! Way better than just a nasty, plain protein shake. :)

In a small bowl, stir together the coconut milk, sweetened condensed milk and sugar. Pour this mixture over the top of the rolls as evenly as you can. Bake for 30 minutes in the preheated oven, until golden brown. Let cool for a few minutes before separating and serving.
